ZUCCHINI PIE | |
4 c. peeled and sliced zucchini (5 c. frozen) Cover with boiling water for 5 minutes. Drain well. 1 c. white sugar 1/2 c. brown sugar 1/2 tsp. each of cinnamon and nutmeg 1/4 tsp. salt 2 tbsp. lemon juice 3 tbsp. flour Mix with zucchini and put in 9 inch unbaked pie shell. Sugar Twin white and brown may be substituted for all sugars. TOPPING: 1/2 c. butter 1/2 c. flour 1/2 c. oatmeal (or a litte more) 1/2 c. brown sugar Crumble together and sprinkle over top of pie. Double if you use topping on bottom instead of pie shell. Bake at 400 degrees for 15 minutes. Reduce heat to 350 degrees for 60 minutes. |
