ZUCCHINI CAKE 
3 eggs
1 1/2 c. sugar
1 c. oil
2 c. flour
1/4 tsp. baking powder
2 tsp. baking soda
3 tsp. cinnamon
1 tsp. salt
3 lg. zucchini, peeled, grated and drained (2 c.)
1 c. finely chopped walnuts
1/2 c. raisins
2 tsp. vanilla
Powdered sugar

Beat eggs, sugar and oil on medium speed until light and fluffy, 3-4 minutes. Sift together flour, baking powder, baking soda, cinnamon and salt. Stir zucchini, nuts and raisins into egg mixture. Fold in flour mixture and vanilla. Blend thoroughly.

Turn batter into well greased 12 cup bundt pan. Bake at 350 degrees for 60 minutes. Cool in pan 20 minutes. Remove from pan and cool thoroughly. Sift powdered sugar over cake before serving.
