HAMBURGER ZUCCHINI CASSEROLE 
1 qt. sliced zucchini squash
1/2 lb. hamburger
1/2 c. cooked rice
1/2 c. stewed tomatoes
1 1/2 c. Parmesan cheese

Steam zucchini with very little water in a covered saucepan until half cooked. Drain well and place in buttered casserole. Brown hamburger and cover squash after pouring off excess fat. Sprinkle cooked rice over squash and hamburger. Spread stewed tomatoes evenly over rice. Top with Parmesan cheese. Bake at 350 degrees for 15-20 minutes.

Serves 4-6.

The wife is pregnant and wasn't feeling to good so I made this recipe for us and our 2 year old son. Very good, altered to tailor what I had handy. Used fresh squash from the garden, 1/2lb ground turkey (leftover from stuffed peppers yesterday), instant rice, crushed tomatoes, and fresh shredded cheddar cheese instead of Parmesan. Turned out great and we plan to make it again and again throughout the summer as our garden produces more and more squash. REALLY easy to make, quick, only 5 ingredients, and tastes delicious. I think next time we might add some more tomatoes.

I just used what I had here and didn't pay much attention to the measurements. Used squash and zucchini, ground hamburger, steam n a bag rice (thawed), and the parmesan cheese. I added a little mozzella cheese on top for texture. It was really good! It came together a lot more than I was thinking it would!
