LAZY HOT WINGS (BUFFALO WINGS)

salt, pepper, onion and garlic powder.
your favorite hot sauce and butter. (usually I use Texas Pete)

I season the wings with salt, pepper, onion and garlic powder in the pan I'm going to cook them in, just toss the wings around as sprinkling the seasonings over them. then arrange them tips up. If you want to, arrange them on a wire rack in the pan to keep them off the bottom. I sometimes do, sometimes don't. On a rack they will be more crispy all around.

Bake till very done (I like the crunchy wing tips) then toss in a bowl of hot sauce and melted butter. Serve.

If somewone doesn't want their wings hot, just don't toss those in the butter/hot sauce (tastes good even without the sauce.)

How much hot sauce and butter depends on how hot and sloppy you want the wings. Use dip if you want, I never do.

Baking temperature varies depending how much of a hurry I'm in, and how crispy/charred I want the wing tips. I like to chew off the crunchy tips, so I arrange the wings with tips facing up.

Bake until well done at 350°F to 425°F.

hmmm time to go and make 5 or 10 pounds... all for me... :) and don't forget the big mug of root beer, you'll need something to tame that heat.
