POLLY MORTON'S VERY GOOD LEMON SQUARES | |
2 c. flour 1/2 c. confectioners' sugar 1 c. butter 4 beaten eggs 2 c. granulated sugar 1/3 c. lemon juice Grated rind of 1 lemon 1/4 c. flour 1/2 tsp. baking powder Mix 2 cups flour and 1/2 cup confectioners' sugar, then cut in butter until all clings together. Press into 9x13 inch pan. Bake at 350 degrees for 20-25 minutes. Beat eggs, granulated sugar, lemon juice and rind. Sift 1/4 cup flour with baking powder and stir into egg mixture. Pour over baked crust. Bake at 350 degrees for 30 minutes or until top is set. Remove from oven. Sprinkle or sift confectioners' sugar over top. Let cool. Cut into squares or bars. |
