MACARONI AND CHEESE SALAD 
2 c. cooked macaroni
2 c. shredded cabbage
1 c. cubed American Cheddar cheese
1/4 c. chopped sweet pickle
1 lg. unpeeled red apple, diced
3/4 tsp. salt
3/4 c. mayonnaise or salad dressing

Cook macaroni until desired doneness on package. Combine macaroni, cabbage, cheese, pickle, apple, salt and mayonnaise. Toss until well blended. Serve salad on crisp lettuce leaves. Makes 6 to 8 servings.

This is a good salad to make for those hot days of summer. The crispness of the cabbage and apple are truly refreshing.
