MAYONNAISE 
1 egg or 2 egg yolks
1 tsp. dry mustard
1 tsp. salt
1 tsp. powdered sugar
Dash of cayenne pepper
Dash pepper
Dash paprika
1 1/2 c. cold salad or olive oil
2 tbsp. vinegar or lemon juice

Mix egg, salt, sugar, cayenne pepper, paprika, beat thoroughly with hand or electric mixer on high speed. Add the oil, a tablespoon at a time, beating well after each addition until 1/2 cup of oil has been used and the dressing is thick, then add remaining oil in large quantities. Add vinegar or lemon juice. Beat well. Makes 2 cups.

NOTE: If oil is added too rapidly, mayonnaise may curdle if this happens, beat curdled mixture into an egg yolk and continue recipe. Don't store in coldest part of refrigerator for it may separate. If so, add it to an egg yolk, beating it in a little at a time.
