FAST AND EASY SALAD 
2 slices bacon
3 c. torn fresh spinach
1 c. torn iceburg lettuce
2 sm. green onions
2 hard boiled eggs, chopped
1 tbsp. sugar
2 tbsp. mayonnaise
1 tbsp. vinegar

Place bacon on a rack in a 12x8x2 inch baking dish; cover with paper towel. Microwave at High for 2-3 minutes. Drain. Crumble bacon, combine with spinach, lettuce, green onions and eggs in a large bowl.

Combine sugar, mayonnaise and vinegar in small bowl; stir with wire whisk. Microwave at High for 30 seconds to 1 minute, or until mixture comes to a boil. Pour over salad; toss lightly and serve immediately. Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
