FRESH APPLE CAKE 
1 1/2 c. Wesson oil
2 c. sugar
3 eggs
2 tsp. vanilla extract
3 c. flour
1 tsp. baking soda
1 tsp. salt
1/2 tsp. cinnamon
1/2 tsp. nutmeg
2 c. finely chopped peeled Granny Smith apples
1 c. chopped pecans
1/2 c. raisins

Combine oil, sugar, eggs and vanilla in mixer bowl, beat well. Add mixture of dry ingredients gradually beating until smooth. Fold in apples, pecans and raisins. Pour into greased and floured 10-inch tube pan or bundt pan. Bake at 325 degrees for 1 1/4 hours or until cake tests done. Cool in pan on wire rack for 10 minutes and remove from pan.
