EASY TACO PIE 
1 (8 1/2 oz.) pkg. corn muffin mix
1 egg
1/3 c. milk
1 1/2 c. shredded sharp cheddar cheese
1 lb. ground beef
1 (1 1/4 oz.) pkg. taco seasoning mix
1 lg. tomato, chopped
Shredded lettuce
1 (1 lb.) can refried beans
Sour cream or plain yogurt for garnish

Preheat oven to 400 degrees. Prepare muffin mix with egg and milk, according to package directions. Stir in 1/2 cup shredded cheese. Spread evenly in a well greased 9-inch pie plate. Bake 15-20 minutes.

Meanwhile, brown ground beef and add taco seasoning mix and water, according to package directions. Chop tomato and shred lettuce. When cornbread crust is done, spread evenly with refried beans and broil until heated through. Layer taco meat, remaining cheese, lettuce, and tomato over beans. Garnish with a ring of sour cream or yogurt. Cut in wedges to serve. Serves 6-8.
