CABBAGE CASSEROLE 
Med. head of cabbage
3 tbsp. butter
3 tbsp. flour
1 1/2 c. milk
1 tsp. salt
6 oz. sharp cheddar cheese cut up,
May use plain cheese instead
1 c. Ritz Cracker crumbs

Core and chop cabbage cook with just enough water to steam well. Drain, melt butter and blend in flour until smooth. Add milk and cheese stirring constantly until boiling point is reached. Reduce heat and cook until creamy. In a buttered casserole dish, layer cabbage and cheese sauce. Top with cracker crumbs. Bake at 350 degrees until bubbly and top has browned a little. (30 to 45 minutes). Makes 12 to 14 servings.
