BAKED LIMA BEANS 
2 c. dried limas
4 slices bacon or 1 ham hock
1 med. onion
1 green pepper
1 (5 oz.) can tomato sauce
2 tsp. salt
1 tsp. dry mustard
2 tbsp. brown sugar
3 tbsp. molasses

Soak beans overnight in cold water. Drain, add 2 quarts of fresh water and boil until tender. Pour beans in buttered casserole. Add minced onion, pepper, sauce and seasonings; mix. Cut bacon and add to beans (or add ham hock). Add water if necessary. Cover and bake 2 hours at 325 degrees. Uncover for the last 20 minutes.
