EASY LEMON SPONGE PIE 
2 eggs, separated
2/3 cup lemon juice with rind
2/3 cup sugar
2/3 cup milk
4 tbsp. all-purpose flour
1 unbaked pie shell

Beat egg yolks and add lemon juice, grated rind, sugar, milk and flour. Mix well. Fold in stiffly beaten egg whites. Pour into prepared pie shell.

Bake at 350°F for 30 to 40 minutes until golden brown.
