VEGETABLE RICE RING 
2 c. cooked rice
1/2 c. Italian dressing
1/2 c. mayonnaise
1 c. sliced radish
1 med. cucumber, seeded and chopped
1 med. green pepper, chopped
1/2 c. chopped celery
1 1/4 green onion, chopped
Leaf lettuce
1 pt. cherry tomatoes

Combine cooked rice and Italian dressing. Cover and chill over night. Add mayonnaise to undrained rice mixture and stir. Fold in the rest of ingredients. Press in 5 1/2 cup mold. Cover and chill 2 to 3 hours. Unmold and place lettuce around ring and tomatoes in center of ring.
