PRETZELS 
1 tbsp. yeast
1 c. lukewarm water
1 tbsp. sugar
3 1/2 c. flour
1/3 c. butter
1 tsp. salt

Combine yeast, water and sugar; stir until dissolved. Beat in 1 cup flour and let stand in a warm place until frothy and light. Add salt, butter and rest of flour or enough for stiff dough. Knead until butter is well distributed.

Roll out dough 3/8 inch thick in long, narrow strips; roll then lap ends across each other and place on a floured board. The first one will have risen enough after all are shaped. Slip handle through loop of pretzel and drop into boiling water. Take out immediately. Place on well greased baking sheet and bake 400 degrees for 15-20 minutes. Sprinkle with salt.
