FRESH VEGETABLE PIE 
2 1/2 c. sliced zucchini
1 c. fresh tomatoes, chopped
1/2 c. onions, chopped
1/4 c. freshly grated Parmesan cheese
1/2 tsp. Italian seasoning
3 eggs
1 1/2 c. non-fat milk
3/4 c. biscuit mix

Mix vegetables and cheese together in 9 inch glass pie plate. Beat milk and eggs together. Add biscuit mix and beat until smooth. Pour over vegetables. Bake in 400 degree oven for 40 minutes until golden brown. Serve immediately.
