FRESH VEGETABLE PIE 
2 c. zucchini squash, diced
1 c. fresh tomatoes, diced
1/2 c. chopped onions
Salt and pepper
1/3 c. Parmesan cheese
3/4 c. Bisquick
1 1/2 c. milk
3 eggs

Layer zucchini, tomatoes and onion on bottom of a "greased" 10 inch pie pan. Sprinkle salt and pepper and also the cheese on vegetables. Mix Bisquick, milk and eggs, pour over vegetables. Bake 30 minutes at 400 degrees or until knife comes out clean. Two smaller dishes can be used.
