VEGETABLE PIE 
1 pie shell, partially baked
1 tomato, cut into small pieces
1 sm. summer squash, sliced
1 sm. zucchini, sliced
1 1/2 c. Mozzarella cheese
1 lb. mushrooms, cut into pieces
1/2 tsp. basil
1/4 c. Hellmann's mayonnaise
Salt and pepper to taste

Layer vegetables in partially baked pie shell: tomato, squash, zucchini. Sprinkle each layer with basil. Continue with mushrooms, mayonnaise and shredded cheese. Bake at 350 degrees for 30 to 40 minutes.
