CLASSIC CHIFFON CHEESECAKE 
1/4 c. butter
1 c. graham cracker crumbs
1/4 c. sugar
2 (8 oz.) pkgs. cream cheese, softened
1 can sweetened condensed milk
3 eggs, separated
1/4 c. lemon juice
1/4 tsp. salt

Preheat oven 375 F. In pan, melt butter, stir in crumbs and sugar. Pat in the bottom of a 9 inch springform pan. Bake 7 minutes, then cool.

Reduce temperature to 300 F. Beat cream cheese until fluffy. Add condensed milk and egg yolks. Beat until smooth. Stir in lemon juice. Set mixture aside.

Beat egg whites and salt until stiff. Fold cream cheese mixture with egg whites. Pour in springform pan over crumb mixture. Bake 50-55 minutes.

Turned out really great. Make sure your cream cheese is completely softened and fluffy. Garnish with a candied lemon slice.
