ITALIAN MEAT LOAF | |
1 (14 1/2 oz.) can Del Monte Italian Style Stewed Tomatoes, drained and chopped 1/2 c. fine, dry Italian-style bread crumbs 1 egg, lightly beaten 1 1/2 lbs. ground beef 3/4 c. (3 oz.) shredded Mozzarella cheese, divided 1/4 c. grated Parmesan cheese All Natural PAM Cooking Spray Combine 1/3 cup tomatoes, bread crumbs and egg in a large mixing bowl. Add ground beef; mix well. Pat mixture into an 8x8x3/4-inch square on a piece of foil. Combine 1/2 cup Mozzarella cheese and Parmesan cheese. Spoon cheese mixture down the center third of beef mixture. Bring opposite ends of beef together parallel to the cheese mixture; seal edges and ends of roll. Shape into loaf. Place, seam side down, on a microwave baking rack coated with cooking spray. Cover with wax paper and microwave at HIGH for 15-17 minutes or until firm, rotating a half-turn after 7 minutes. Place remaining tomatoes in a 4-cup glass measure. Microwave at HIGH for 2 minutes or until thoroughly heated. Spoon over meat loaf. Sprinkle with remaining cheese. Microwave at HIGH for 1 minute or until cheese melts. Let stand 5 minutes before serving. Yield: 6 servings. Conventional instructions: Prepare meat loaf as directed above. Place seam side down on a rack in a broiler pan coated with cooking spray. Bake, uncovered, at 350 degrees for 45-50 minutes. Pour remaining tomatoes over meat loaf; sprinkle with remaining cheese. Continue to bake an additional 8-10 minutes. |
