WILTED SPINACH SALAD 
Sm. casserole dish 3 qt. deep dish

Time: 16 minutes. Servings: 6.

Wash spinach. Drain and dry with paper towels. Set aside. 1/2 c. green onions, chopped

In small casserole, microwave bacon on high 6 minutes until crisp. Remove bacon and set aside. Add green onions. Microwave on high 2 to 3 minutes.

In 3 quart dish, put above bacon drippings and onions. Add mushrooms. Microwave on high 5 minutes until partially sauteed. 2 tbsp. lemon juice 2 tsp. sugar 1 1/2 tsp. salt 1/4 tsp. black pepper 1/4 tsp. mustard

Combine wine vinegar, lemon juice, sugar, salt, black pepper, and mustard. Add crumbled bacon bits. Add this mixture to the above mushrooms in 3 quart dish. Microwave on high 3 minutes. Place spinach in large salad bowl. Pour hot mixture over spinach and mix until wilted. Serve hot.

Note: For variety, you may add Parmesan cheese and 2 hard cooked eggs, chopped.

Since microwave ovens vary in power, you may need to adjust your cooking time.
