WILTED LETTUCE AND SPINACH SALAD 
6 slices bacon
1 egg, slightly beaten
1 1/2 tbsp. sugar
1/4 tsp. salt
1 tbsp. lemon juice
3 tbsp. vinegar
1/2 tsp. dry mustard
1/2 c. sour cream
1/2 med. head lettuce, torn
3 c. spinach, torn
5 green onions, thinly sliced

May use all lettuce, if desired.

Cook bacon until crisp, saving the drippings. Beat egg slightly, add 2 tablespoons bacon drippings and remaining ingredients up to sour cream. Mix well. Microwave for 2 to 2 1/2 minutes or until thickened.

Toss together lettuce, spinach, green onions, and crumbled bacon. Just before serving, pour dressing over and toss until well coated. Serve immediately.

Since microwave ovens vary in power, you may need to adjust your cooking time.
