SWEET POTATO CASSEROLE 
2 c. sweet potatoes, cooked and drained
1 1/2 c. brown sugar
2 eggs, well beaten
1/2 c. milk
2 tbsp. butter
1/2 tsp. cinnamon
1/2 tsp. nutmeg

TOPPING:

3/4 c. maple or honey-flavored buckwheat flakes, crushed
3/4 c. brown sugar
2 tbsp. butter
1/2 c. chopped nuts

Preheat oven to 400 degrees. Grease a casserole dish.

Combine sweet potatoes, brown sugar, eggs, milk, butter, cinnamon and nutmeg. Pour into prepared dish. Bake at 400 degrees for 20 minutes.
