CABBAGE SALSA | |
This is a great alternative to regular tomato salsa. 1/2 head green cabbage 1/2 red onion 1 medium tomato 1 large jalapeno (fresh) 3 tbsp. fresh cilantro (approx. to taste) canola oil salt and pepper, to taste Cut cabbage head in half, then in quarters, then core it. Cut each of the two quarters you will be using in half, then slice very thin. Put all this in a bowl. Cut red onion in half, dice the half being used, the tomato and the jalapeno in small pieces, but all this in the bowl with the cabbage. Take stocks of cilantro, cut off as much stem as possible and chop the rest and put in bowl, you can add more or less to your taste. Add the canola oil, just to moisten the salsa, mix. You can add more or put less, depending on your desired taste and consistency. Salt and pepper to taste. Serve with Tortilla chips. Enjoy! Submitted by: Judy Orr |
