NO EGG CHOCOLATE CHIP COOKIES 
1 c. butter
1 c. confectioners' sugar
1 1/2 c. flour
1/2 tsp. baking soda
1 c. quick oats
1 1/2 tsp. vanilla
6 oz. chocolate chips

Cream butter and add sugar. Sift flour and baking soda. Mix in. Then add quick oats, vanilla and chocolate chips. Bake at 350°F for 15 minutes or until lightly browned.

Made these cookies because I was out of eggs. I like ooey gooey cookies better. But these were alright. They had a sand cookie texture on the outside and heavy on the inside and were kinda of crumbly.

I've been looking for a simple egg free recipe that would work. I am also gluten free so I used gf flour for these. The cookies were good but still not the flavor I'm looking for. They reminded me more of shortbread cookies and they were fragile. Tasty, I would make these again.

I LOVE this recipe!! I love shortbread, so this is like the perfect blending of shortbread and chocolate chip cookies! I also add chopped pecans and Heath toffee bits. It's our favorite cookie at my house! :) Be prepared for the dough to be much drier and more crumbly than you're used to! :)
