ORANGE PUDDING 
1 tbsp. butter
1/2 c. sugar
2 tbsp. flour
2 eggs, separated
1 c. orange juice
1 orange rind, grated
1 c. milk

Cream butter; add sugar gradually. Mix well; add flour. Beat egg yolks until thick; add to creamed mixture with orange juice and rind. Stir in milk. Beat egg whites until light but not dry. Fold into custard mixture. Pour in pudding pan; set in hot water. Bake at 350 degrees about 30 minutes or until set.
