BAKED ORANGE PUDDING 
1/3 c. sugar
3 tbsp. bread crumbs
Grated rind and strained juice of 1 orange
1 c. milk
1 egg

Beat the egg thoroughly and add the orange and sugar; scald the milk () and pour it over the crumbs. Add the first mixture and, when well mixed, pour into a baking dish. Bake until set like a custard, and serve cold. Bake at 350 degrees.

To scald milk, heat to just below boiling and keep at that temperature for a few minutes. A "film" will form over the top of the milk as it cools.
