ALMOND-ORANGE PUDDING 
1/2 c. raw almonds
2 c. orange juice (not frozen but squeezed with pulp)
1 grapefruit
1 c. strawberries (optional)
2 mint sprigs (optional)

Sweet, rich and delicious! Wait at least an hour after you meal to serve this dessert.

Rinse and soak almonds overnight or for 8 hours. Pour over water. Blend orange juice in blender at highest speed, adding almonds. Blend until almost smooth, about one minute. If mixture is too thick to blend, a little more orange juice can be added. Cut off and discard just the yellow part of the grapefruit peel. Cut off the white part of the grapefruit peel and add to blender mixture. Blend until completely smooth. This may take as long as another minute. Separate grapefruit sections, discarding membranes. Refrigerate grapefruit in airtight container. Refrigerate blender mixture until congealed (24 hours). Serve pudding topped with grapefruit sections and strawberries, garnished with a sprig of mint.
