BANANA NUT BREAD 
2 c. flour, sifted
1 tsp. baking soda
1 tsp. salt
1/2 c. shortening
1 c. sugar
2 eggs
1 c. bananas, mashed (about 3)
1/2 c. buttermilk

Blend flour, soda and salt. Cream shortening and sugar. Add eggs and bananas. Beat until fluffy. Add flour mixture alternately with buttermilk. Bake as sheet cake, bread, muffins or miniature muffins at 350 degrees. Top with icing or glaze while still warm. Also, delicious plain.
