PEAR RELISH | |
1 peck hard pears 6 lg. onions 6 red sweet peppers 6 green sweet peppers 6 hot red peppers 3 c. sugar 1 tbsp. plain salt 5 c. vinegar 1 tbsp. ground allspice 1 tbsp. mustard seed 1 tbsp. celery seed Wash, peel and core pears. Remove seeds and stems from red, green and hot peppers. Put through food grinder the pears, onions, red, green and hot peppers. In a large enamel or stainless pot put mixed ground vegetables with sugar, salt, vinegar and spices. Let stand at least 8 hours or overnight. Bring to a boil and cook, stirring occasionally for about 10 minutes. Pack in hot jars leaving 1/4 in head space. Seal. Process in boiling water bath for 20 minutes. Makes 10-12 pints. |
