BAKED LIVER AND ONIONS 
4 slices bacon, halved
1 lb. beef liver, sliced thin
1/2 tsp. salt
Pepper to taste
Flour
2 1/2 c. sliced onions
1/2 c. hot water

Pan fry bacon until crisp; remove from skillet and set aside to drain on paper toweling. Sprinkle liver with salt and pepper. Dredge in flour. Brown lightly in hot bacon fat. Remove liver to a greased casserole. Cover with onions. Rinse skillet with hot water and pour over liver and onions. Crumble crisp bacon over top. Cover and bake at 350 degrees for 45 minutes. Serves 3 to 4. NOTE: If desired, bacon strips can be arranged over top rather than crumbled.
