VEGETABLE MELANGE 
1 yellow squash, sliced thinly
1 zucchini, sliced thinly
1/4 c. red bell pepper, sliced thinly
1/4 c. yellow or green bell pepper, sliced thinly
1/4 c. fresh mushrooms, sliced
1 carrot, sliced thinly
1 green onion, sliced thinly (include green tops)
1 fresh tomato
Parsley
Mint, if desired

Stir fry mixture quickly in 2 tablespoons butter, approximately 5 minutes. After turning heat off, stir a chopped tomato into mix. Sprinkle with chopped parsley. A tiny bit of chopped fresh mint adds a flavorful touch to a colorful dish.
