OLD FASHIONED DATE NUT LOAF
1/2 cup sugar
2 teaspoons baking powder
1 cup flour
1/4 teaspoon salt
1/4 cup milk
1/2 lb dates, finely chopped
2 eggs, separated
1/2 lb chopped walnuts or pecans
1 teaspoon vanilla or rum

Have eggs at room temperature.

Separate egg whites from yolks. Beat egg yolks until light and fluffy. Add sugar slowly. Add milk, dates and vanilla or rum.

Sift together baking powder, flour and salt and gradually add to mixture, continuing to beat. Add dry ingredients to the egg yolk mixture.

In a separate, clean bowl, beat egg whites until stiff but not dry. Fold egg whites gently into mixture so as not to deflate.

Bake at 325°F for 60 minutes or until done.
