DIVINE DATE-NUT LOAF | |
4 eggs 1 c. sugar 1/2 c. oil 1 c. sifted flour (self-rising) 1 lb. chopped pitted dates (about 3 c.) 4 c. chopped pecans Beat together the eggs, sugar and oil. Add the dry ingredients and mix together well. Pour into a greased and floured loaf pan (9 x 5 x 2-inch) and place in a cold oven. Turn on the oven to 300°F and bake for 1 1/2 to 2 hours or until cake is firm in the middle. Let cool completely. Remove from pan and slice with a very sharp knife or wrap and freeze for slicing and serving later. Makes a 3 pound loaf. This moist, chewy date-nut loaf will serve you well throughout the holiday season. Enjoy as a snack, at parties, for dessert of anytime you want to serve something delicious. |
