HAM WITH SWEET POTATOES 
1 1/2 lbs. ham or shoulder
2 tbsp. sugar
1 tbsp. fat drippings
3 c. raw, sliced sweet potatoes
1 c. hot water

Cut ham or shoulder into serving pieces. If meat is salty, pre-boil in water and drain. Brown meat lightly on both sides and arrange meat to cover bottom of a 2 quart baking dish. Spread the sweet potatoes over the meat and sprinkle with sugar. Add the hot water to the drippings in the fry pan, cover and bake at 325 degrees until meat and potatoes are tender. Baste potatoes occasionally with gravy. Toward last, uncover and bake until brown. Serves 5 to 6.
