CATHERINE'S STARLIGHT CAKE 
2 c. all-purpose flour
1 1/2 c. sugar
3 1/2 tsp. baking powder
1 tsp. salt
1/2 c. shortening (half butter, softened, if desired)
1 c. milk
1 tsp. vanilla
3 eggs

If using self-rising flour, omit baking powder and salt.

Heat oven to 350 degrees. Grease and flour baking pan, 13 x 9 x 2 inch or 2 round layer pans. Measure all ingredients into layer mixer bowl. Blend 1/2 minute on low speed, scraping bowl constantly. Beat 3 minutes on high speed scraping bowl occasionally. Pour into pan(s).

Bake oblong 40-45 minutes, layers 30-35 minutes or until wooden pick inserted in center comes out clean. Cool. Perfect for those Sweet Balcony Trysts. If desired frost with French Silk Frosting.

FRENCH SILK FROSTING:

2 2/3 c. confectioners' sugar
2/3 c. soft butter
2 oz. melted unsweetened chocolate (cool)
3/4 tsp. vanilla
2 tbsp. milk

In small mixer bowl, blend sugar, butter, chocolate and vanilla on low speed. Gradually add milk; beat until smooth and fluffy.
