PAM'S CHICKEN 'N' POTATOES
DELIGHT
 
1 lb. boneless chicken breast
4 med. sized potatoes
2 lbs. carrots
1 can apricots
1/2 lb. butter
Salt
Black pepper
Fresh parsley
Lemon juice
Chicken broth

1. Cut and clean chicken.

2. Add 1 cup lemon juice.

3. Add salt, black pepper and fresh parsley.

4. Put butter in pan and add chicken, cooking over slow heat, add chicken broth. Let cook for about 15 minutes until lightly brown.

5. Place chicken in oven and add more seasonings. Cook for 1/2 hour at 350 degrees.

CARROTS:

1. Clean and slice carrots.

2. Place butter in pan, add carrots and salt to taste and cook over slow heat for 15 minutes. Drain apricots and add to carrots, stir together and cook for another 5 minutes.

RED POTATOES:

1. Clean well.

2. Peel around the middle only.

3. Add butter and salt, place in a pan and cook for about 1/2 hour.
