ZUCCHINI CASSEROLE 
4 c. zucchini, sliced
3/4 c. carrots, grated
1/2 c. onion, chopped
1 1/4 c. Stove Top stuffing (prepared)
1 can cream of chicken soup
1/2 c. sour cream
3 tbsp. butter (oleo), melted
1 c. Stove Top stuffing
3 tbsp. butter

Grease a 7x11 casserole. Layer zucchini, carrots, and onion. Add 1 1/4 cup stuffing and 3 tablespoons butter. Layer of zucchini. Add sour cream mixed with soup. Top with 1 cup stuffing mix and melted butter. (Cubed, cooked chicken may be added, if desired.)

Bake at 350 degrees for 30-40 minutes.
