ZUCCHINI CASSEROLE 
4 med. zucchini, cubed (about 4 c.)
1 stick melted butter
1 can cream of chicken soup
1 c. sour cream
1 lg. onion, chopped
1 box Stove Top stuffing

In boiling water, cook zucchini for 2 minutes; drain. Mix stuffing with melted stick of butter. Set aside. Mix 1 can of cream of chicken and 1 cup sour cream. Add to drained zucchini in bowl with chopped onion. Layer in 13 x 9 x 2 inch pan, beginning and ending with stuffing mix. Bake in 350 degree oven for 50 minutes.
