CANDIED SWEET POTATOES 
4 1/4 qt. sweet potatoes, canned or frozen, cooked, sliced
3 c. sugar
3/4 c. brown sugar, light pack
1/4 c. & 2 tbsp. corn syrup, light
1/4 c. lemon juice
3 c. water, hot
3/4 c. butter, melted

Place sweet potatoes in greased baking pans. (Use 1 full sized steam table pan for 50 servings.) Dissolve sugar, brown sugar and corn syrup on hot water. Mix in lemon juice. Pour liquid mixture over sweet potatoes. Drizzle butter over the top. Bake at 375 degrees for 30-40 minutes. Baste sweet potatoes occasionally. Garnish with cashews or miniature marshmallows.
