DO - AHEAD OATMEAL CHOCOLATE
CHIP COOKIES
 
1 c. brown sugar
1 c. white sugar
2 sticks butter
2 eggs
1 tsp. vanilla
1 tsp. baking soda
1 1/2 c. flour
1 tsp. salt
3 c. instant oatmeal
1 c. nuts (optional)
1 pkg. semi-sweet chocolate chips

Combine sugars and shortening and mix well. Add eggs and vanilla and beat well. Mix sifted dry ingredients to sugar mixture. Fold in oatmeal, nuts, and chocolate chips. Mix dough well using hands if needed as dough is very stiff. Divide dough into four parts and roll each into a log. Roll each log in wax paper and refrigerate for future use. Slice log and bake at 325 degrees for approximately 10 minutes.
