PENNSYLVANIA DUTCH LIGHT GINGER COOKIES | |
1 c. butter, softened 1 c. confectioners sugar 1 tbsp. vinegar 3/4 tsp. baking soda 1 1/2 to 2 tsp. ginger 1/4 tsp. salt 2 1/4 c. all purpose flour Heat oven to 400 degrees. Mix thoroughly butter, sugar, and vinegar. Blend in remaining ingredients. If dough is too dry to handle, easily work in milk, 1 teaspoon at a time. Roll dough 1/8 inch thick on lightly floured cloth covered board. Cut into desired shapes. Place on ungreased baking sheet. Bake 6-8 minutes until light brown. Cool slightly. If desired, decorate with icing (1 1/4 cup confectioners sugar with 2 tablespoons water). |
