OATMEAL CRISPIES 
1 c. shortening
1 c. brown sugar
1 c. granulated sugar
2 well beaten eggs
1 tsp. vanilla
1 tsp. baking soda
1 tsp. salt
1 1/2 c. flour
3 c. oatmeal
1/2 c. pecans, chopped
1/2 c. coconut

Thoroughly cream shortening and sugar. Add eggs and vanilla; beat well. Add sifted dry ingredients. Add oatmeal, nuts and coconut; mix well. Shape into rolls. Wrap in foil or waxed paper and chill thoroughly. Slice 1/4" thick. Bake at 350 degrees for 10 minutes. This recipe can also be frozen and sliced and baked as needed.
