APPLE RICE PUDDING 
1/2 c. long grain rice
2 c. skim milk
1 vanilla bean or extract
1/3 c. golden raisins
3 tbsp. sugar
1 tsp. grated orange rind
2 golden delicious apples
Pinch nutmeg
3 egg whites
1/4 c. confectioners' sugar

Combine rice, milk and vanilla in saucepan. Bring to boiling. Lower heat and simmer, covered 20 minutes. Stir in raisins, sugar and orange rind. Preheat oven to 300 degrees. Peel and halve the apples. Cut into thin slices. Arrange apples in a circle in 9 inch pie plate. Sprinkle with nutmeg. Spoon rice mixture on top, mounded in center. Beat egg whites until foamy and add sugar. Beat until stiff and spread over rice to edge. Bake in preheated oven for 20 minutes until meringue is lightly browned.
