APPLE RICE PUDDING 
2 c. rice
1 1/4 tsp. salt
5 c. water
3 c. water
3 c. applesauce
1 c. raisins or dates
1 c. chopped, toasted nuts

Cook rice in boiling salt water until all liquid is absorbed. Cool and add applesauce, fruit and nuts. Serve hot or cold. Yield 6 servings.
