APPLE RICE PUDDING 
2 c. skim milk
1/2 tsp. ground cinnamon
1/4 tsp. salt
Dash ground nutmeg
1/3 c. long grain rice
1 1/2 c. coarsely chopped apples
1/4 c. frozen whipped non-dairy dessert topping, thawed
Ground nutmeg

In a heavy medium saucepan combine milk, cinnamon, salt and nutmeg. Bring to boiling. Stir in uncooked rice. Cover and cook over low heat for 20-25 minutes or until most of milk is absorbed, stirring occasionally (mixture may appear curdled). Stir in chopped apples. Cool thoroughly.

Fold whipped dessert topping into the rice mixture. Spoon into 6 individual dessert dishes. Chill for 2-24 hours. If desired sprinkle with additional ground nutmeg before serving. Makes 6 (1/2 cup) servings.
