APPLE RICE CRISP 
4 apples, peeled, cored & sliced
2 c. cooked rice
4 tsp. lemon juice
3/4 c. brown sugar, divided (well pack sugar)
1/2 tsp. cinnamon
1/4 tsp. salt
3/4 c. flour
6 tbsp. butter
1/2 c. pecans, chopped or other nuts

Preheat oven to 350 degrees. Combine apples, rice, lemon juice, 1/4 cup packed brown sugar, cinnamon and salt in a large bowl. Spoon into buttered 9 x 13 inch baking dish. Mix together flour and remaining brown sugar. Put in butter until mixture is crumbly. Stir in pecans and sprinkle over apple-rice mixture.

Bake for 30 minutes or until apples are tender. Serve warm and plain or topped with ice cream. Makes 8 servings. Note: Have used frozen blueberries or frozen peaches, drained in place of apples.
