APPLE RICE PUDDING 
3 sm. apples, peeled, cored, and finely chopped
1 1/2 c. cooked rice
1 c. skim milk
8 dates, finely sliced
1 tbsp. sugar
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla
1 tbsp. vegetable oil
3 eggs, separated

Preheat oven to 325 degrees. In large bowl stir together all ingredients except egg whites. Beat egg whites stiff and fold into apple-rice mixture. Turn into 1 1/2-quart baking dish. Set dish in larger baking pan on oven rack. Pour boiling water in larger pan to depth of 1 inch. Bake for 70 minutes. Serve warm or chilled. 1/2 cup serving = 1 bread, 1 fat, 1 fruit. 140 calories.
