RAISIN APPLE RICE 
2 c. apple juice
2 c. water
2 c. long grain rice
3/4 c. raisins
1/2 c. salted peanuts

Bring to boil apple juice and water in adequate size pot. Add 2 cups rice and raisins; stir. Lower cooking heat and cook, covered 15 to 20 minutes or until rice has absorbed all the liquid. Turn off heat and remove pot. Stir in peanuts. Makes 12 2/3 cup servings.
