OVEN STEW 
2 lbs. stew meat (1 lb. optional)
3 stalks celery, diced or cut
1/2 c. onion, chopped
2 tbsp. minute tapioca
1 (8 oz.) can tomato juice
2 tbsp. brown sugar
4 lg. potatoes, cubed
Other desired vegetables such as tomatoes, baby carrots, zucchini, etc.

Put all ingredients in roaster with lid and bake at 250 degrees for 5 hours. Can also use crockpot. Cook on medium for 5 hours.
